Tomato Salad with Fresh Mozzarella

This salad is best made in the late summer when tomatoes are in season and grown fresh in your backyard or farmer's market. 

Serves: 4-6
Prep time: 15 mins

INGREDIENTS:
3 vine ripened but firm tomatoes, cut into even slices
8 oz fresh mozzarella cheese, cut into even slices
1/3 cup extra virgin olive oil
1/4 cup chopped fresh basil, in chiffonade (aka ribbons)
Salt and pepper to taste

DIRECTIONS:
On a serving plate or bowl, arrange a tomato slice and cheese slice.
Repeat pattern until finished.  Top with fresh basil.
Season with sea salt and fresh ground pepper.
Drizzle with a good quality extra virgin olive oil.
