Ham Casserole

This dish is some serious comfort food!  It is great to make with leftover ham from your holiday meals and whatever else you have on hand.  It is not an exact science, so you can add as much or as little as you like.  I like to make it lighter by using less cheese and light cream of mushroom soup.  Either way, this dish is a crowd pleaser. 















Prep time: 30 mins
Cook time: 1 1/2-2 hours
Serves: 8

INGREDIENTS:
4 medium potatoes, sliced
1 large onion, sliced in rings
1 small bag of frozen peas (or fresh)
1 package of sliced mushrooms
5 oz cheddar cheese
5 oz Jack cheese
Slices of leftover ham
1 can of Cream of Mushroom soup
Oregano
Dried red chili pepper
Salt & pepper

DIRECTIONS:
Grease a large 13x9 Pyrex dish with non-stick spray or butter.  Layer the following ingredients in order, two times (you can do just one layer of each if you don't think you'll have enough room for two): Sliced potatoes, onion rings, frozen peas, sliced mushrooms, ham and cheese

Mix the oregano, red chili pepper, salt and pepper into a bowl. Combine with cream of mushroom soup and equal amounts of milk (you can add less milk if you want the dish to be less runny). Top with cheese (of course!)

Put the casserole dish on top of a cookie sheet in case it spills over.  Cook at 350F for 1 1/2 -2 hours.
